No Messy hands!! I read the reviews and a cooked made two one chicken and one beef. So I added shredded beef too. I halved the recipe and cut the tortillas in quarters.I really like the suggested toppings as this was the first recipe I have rated without improvising because it was done for me. I topped with a drizzle of sour cream, enchilada sauce, jalapeno, green onion, cilantro and red cabbage.Tacolicious!! I am making this again and again, changing it up each time to build on its fabulousness!!This was easy to make and store leftovers.Here are my adaptations to the recipe:Used chicken tenders vs breast, substituted shredded zucchini for spinach and used ½ teaspoon Italian Herb Better Than Bouillon for the chicken bouillon granules and reduced to 1/4 C sun-dried tomatoes.
