Lisa Lynn's Special Spaghetti

In our home, our cooking style is building the traditional into a super flavorful showpiece. The secrets to this spaghetti sauce are ground turkey, black olives, zucchini and tons of LOVE! You will enjoy this spaghetti creation of a chunkier and healthier fun-eating experience.

Ingredients

  • 1lb Ground turkey (93% lean 7% fat)

  • 3T Olive Oil, divided

  • 1T Kosher salt, divided

  • 1t Lemon pepper

  • 1 Medium onion, chopped

  • 3 Medium cloves of garlic, minced

  • 1/2C large pitted olives, halved

  • 1 Medium zucchini sliced into 1/2" coins, then quartered

  • 1t Dried oregano

  • 4C Pasta sauce (we use Prego Traditional)

  • 16oz Package of spaghetti (we use Rao's)

Directions

  1. In a large frying pan add 1 tablespoon of olive oil and the ground turkey, 1 teaspoon salt and lemon pepper. Sautee on medium low heat while breaking up the turkey meat. Cook till done, approximately 10-12 minutes.

  2. In a separate and smaller frying pan heat on medium low the remaining 2 tablespoons of olive oil, add onions and cook till semi-tender, about 6-8 minutes. Add the garlic and zucchini and cook an additional 2 minutes.

  3. In a large sauce pan add pasta sauce, cooked turkey, sauteed onions, garlic and zucchini mixture, oregano, and black olives. Cook on medium low for 20 minutes stirring occasionally.

  4. While pasta sauce is cooking, cook the spaghetti in a large pasta pan of 4-6 quarts of boiling water with 2 teaspoons of salt and a splash of olive oil. Cook till al dente approximately 12 minutes and drain.

  5. Place an individual spaghetti portion in a serving bowl and top with desired about of meat sauce. Enjoy as is or with a sprinkling of parmesan cheese and/or crushed red peppers.

Ideas/Tips

  • *Start boiling the water for pasta as the first step to reduce waiting time of boiling water. *If finishing up a jar of the pasta sauce consider adding a splash of red wine for flavor and to rinse out the jar for easy cleaning. *Place a ladle full of the hot pasta water in each serving bowl to take the chill off the bowl, discard and add pasta immediately. *Consider serving with parmesan crisps vs. bread to reduce calories (save calories for the wine) :-) *If cooking for 1-2 you will learn how to reduce the number of pans by frying the turkey and onions together, add pasta sauce and vegetables in one sauce pan, then adding the cooked spaghetti at the last moment. This creates a hotter entree.
