2 tablespoons apricot preserves

1 teaspoon spicy brown mustard

4 (8 ounce) fresh salmon fillets
Directions

Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.

Combine apricot preserves and mustard.

Place salmon fillets on the prepared baking sheet. Brush 1/2 apricot-mustard over top.

Bake in the preheated oven, on the top rack, for 16 minutes. Brush with remaining 1/2 apricot-mustard. Continue baking until salmon flakes easily with a fork, about 2 minutes more.
