Ingredients

Original recipe (1X) yields 4 to 6 servings

Salad

  • 1 cup chopped honeydew melon

  • 1 cup chopped cantaloupe

  • 1 cup chopped watermelon

Dressing

  • 1/2 cup olive oil

  • 1/3 cup balsamic vinegar

  • 2 oranges, juiced

  • 3 to 4 mint leaves, chopped

  • 1 tablespoon agave syrup

  • 1/2 cup crumbled feta cheese

Toppings

  • sprinkle of slivered almonds

  • drizzle of balsamic glaze

Directions

  1. Add honeydew, cantaloupe, and watermelon to a bowl.

  2. For dressing, add olive oil, balsamic vinegar, orange juice, mint, and agave syrup to a bowl and whisk together, or add to a jar with tight fitting lid, cover the jar, and shake well.

  3. Pour as much dressing as desired over melons and mix well; add feta and mix again. Garnish with mint leaves, sprinkle with almonds, and drizzle with a small amount of balsamic glaze.

    Recipe Tip:

    This recipe makes enough dressing that you may have some left over for the next salad.
