Non Dairy Vanilla Ice Cream

Based and Altered from a recipe published here on AR to suit dietary need. This recipe requires an ice cream machine. It's super creamy & oh so yummy.

Ingredients

  • 2 cups So Delicious Non-Dairy Coconut Creamer (I used Vanilla creamer)

  • 1 cup Coconut Milk (your preference I like Califia Farms Coconut Almond milk Blend)

  • 1 can (12.2oz) Evaporated Coconut Milk

  • 3/4 cup granulated sugar

  • 1 TBSP vanilla extract or 1 Madagascar vanilla bean pod, split, scrapped and pod discarded (optional)

Directions

  1. In a small bowl, pour creamer, coconut milk & evaporated coconut milk. Mix well.

  2. Add sugar and whisk until sugar is dissolved or well blended, add vanilla & stir.

  3. Refrigerate, covered, until very cold, at least 3 hours or as long as 3 days.

  4. Whisk the mixture to blend and pour into the canister of an ice cream maker. Freeze according to the manufacturer's directions. Eat immediately OR transfer to a covered container and freeze 2 to 8 hours.

  5. ***Additional note: I have also changed the granulated sugar for 3/4 cup Xylitol for dietary reasons & it works splendidly in place as a sugar alternative.***
