I can't seem to debuff onimusha attack at all and always die at the last attack

Get more luck? Turtle ladle for example. Although if you leave the dungeon, when you go back in you won't be at the boss.

Yeah only for that. Well it's also needed for the dlc 3 ending. If you don't have it, Grimm doesn't get saved at the end. Also like 99% of the 0 sen dialogue is just a simple replacement cypher of their regular dialogue.
tl:dr, eldritch abominations take interest in fairy tales and try to learn to be human. It doesn't go well for the fairy tale writers.

After beating the slaughterhouse boss and going to the right I cannot find the npc you are talking about for the 30 candy
For trading in the candies, it's talking about the bird that is on the top right of the prison. There's a sparkle on the ground where you need to stand to talk to it. It's near the door to the chaos dungeon if you are familiar with that.

You need to talk to him at Lutwidge's bar, then Duchess' House entrance, then Slaughterhouse and finally he will give you candy at Carroll River
