This low-sugar strawberry compote recipe takes advantage of natural ingredients, allowing the simple goodness of the strawberries' sweetness to shine through. It can be used as an ice cream, pancake, waffle, or French toast topper. Feel free to also use it in pastries.

Ingredients

Original recipe (1X) yields 4 servings

  • 2 cups strawberries, rinsed, hulled, and quartered

  • 1 tablespoon honey

  • 1 teaspoon lemon juice

Directions

  1. Heat a saucepan over medium-low heat. Add strawberries, honey, and lemon; crush with a hand-held food chopper or potato masher. Simmer, uncovered, until strawberries reduce down, about 8 minutes. Stir.

  2. Increase heat to medium-high; cook 5 minutes more. Serve immediately.
