Ingredients

Original recipe (1X) yields 20 servings

  • 1 cup tahini

  • ½ cup granulated sugar substitute (such as Swerve®)

  • 1 teaspoon vanilla extract (gluten free)

  • ¼ teaspoon nutmeg

  • cup SunButter®, any variety

  • ½ teaspoon sea salt

  • ½ cup toasted sunflower seeds

  • cup unsweetened coconut flakes

  • ½ cup ground flax seed

  • 3 ounces dairy-free dark chocolate chips

  • 1 tablespoon organic chia seeds

Directions

  1. Mix tahini, sweetener, and vanilla until smooth. Add remaining ingredients and mix well.

  2. Refrigerate for 30 minutes.

  3. Remove from refrigerator and roll into 1 inch balls, place evenly on parchment covered cookie sheet.

  4. Freeze for 30 minutes before serving.

  5. Store any uneaten energy balls in the freezer to enjoy later.

Note:

Instead of 1 cup granulated sugar substitute, you can use 1 teaspoon stevia or, for Paleo, 1/2 cup coconut sugar.
