These refreshing lemon brownies are always a favorite at the never-ending potluck in the emergency room I work in. I was never a huge fan of lemon... until now! I hope you enjoy them as much as I do.

Ingredients

Original recipe (1X) yields 16 servings

Lemon Brownies:

  • ¾ cup all-purpose flour

  • ¾ cup white sugar

  • ½ cup unsalted butter, softened

  • ½ teaspoon sea salt

  • 3 large eggs

  • 2 tablespoons lemon juice

  • 1 tablespoon lemon zest, plus more for glaze

Lemon Glaze:

  • 1 cup confectioners' sugar

  • ¼ cup lemon juice, or to taste

  • ¼ teaspoon vanilla extract

Directions

  1. Gather all ingredients.

  2. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.

  3. Beat flour, white sugar, butter, and salt together in a large bowl using an electric mixer until well mixed.

  4. Whisk eggs, 2 tablespoons lemon juice, and 1 tablespoon lemon zest together in a separate bowl.

  5. Pour egg mixture into flour mixture; beat on medium speed with an electric mixer until smooth, about 3 minutes.

  6. Pour batter into the prepared baking pan.

  7. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 23 to 25 minutes. Cool on a wire rack until bottom of pan is warm to the touch.

  8. Meanwhile, make the lemon glaze: Whisk confectioners' sugar, 1/4 cup lemon juice, vanilla extract, and lemon zest together in a bowl until smooth. Spread glaze over cooled brownies. Cut into squares.

Cook’s Note

Be sure not to bake them too long, as they can turn out dry. They are more cake-like than a traditional brownie.

I use lots of lemon juice in the glaze but taste as you go to find the perfect balance.
