Ingredients

Original recipe (1X) yields 32 servings

  • 2 (11 ounce) cans Mexican-style corn, drained

  • 1 ½ cups shredded Cheddar-Monterey Jack cheese blend

  • 1 cup light sour cream

  • 1 cup mayonnaise

  • 1 (8 ounce) package 1/3-less-fat cream cheese, softened

  • 1 (4 ounce) can diced green chiles

  • ½ cup diced green onion

  • 2 jalapeño peppers, seeded and finely chopped

Directions

  1. Mix corn, Cheddar-Monterey Jack cheese blend, sour cream, mayonnaise, cream cheese, green chiles, green onion, and jalapeño pepper together in a bowl. Serve immediately, or cover and refrigerate until ready to serve.
