Mom's pineapple bread pudding recipe was handed down from my mother. Our family would have this wonderful side dish every Christmas and Easter. It is so easy to make.

Ingredients

Original recipe (1X) yields 10 servings

  • 5 slices bread, cubed

  • 1 (20 ounce) can crushed pineapple

  • 1 cup white sugar

  • 4 eggs, well beaten

  • ½ cup unsalted butter, melted

Directions

  1. Preheat the oven to 325 degrees F (165 degrees C).

  2. Place bread cubes in a 2-quart baking dish. Stir in pineapple, sugar, eggs, and melted butter until combined. Cover baking dish with aluminum foil.

  3. Bake in the preheated oven until puffed and golden brown, about 1 hour.
