While making a pitcher of my strawberry mojitos, I had a request for one without any alcohol. The strawberry mint soda was born and seemed to be a hit! You can adjust the taste by adding less or more of any ingredient. Refreshing and light, it's perfect on a hot summer day.

Ingredients

Original recipe (1X) yields 8 servings

  • 2 large limes, quartered

  • ½ bunch mint leaves

  • 7 strawberries, quartered

  • 1 cup white sugar, plus more for rimming glasses

  • 3 cups carbonated water

  • ice cubes

Directions

  1. Squeeze lime quarters into a sturdy glass pitcher. Toss juiced limes into the pitcher along with mint, strawberries, and sugar. Crush fruits together with a muddler to release juices from strawberries and oil from mint leaves. Stir in carbonated water until sugar is dissolved.

  2. Rim glasses with sugar and fill with ice cubes. Pour strawberry-mint soda over ice cubes to serve.
