Ingredients

Original recipe (1X) yields 4 servings

  • 3 large egg yolks

  • 1 ½ tablespoons fresh lemon juice

  • 4 tablespoons unsalted butter, chilled

  • ¾ cup unsalted butter, melted

  • salt and ground white pepper to taste

  1. Gather all ingredients.

  2. Place egg yolks into a small saucepan; whisk until lemon yellow and slightly thick, about 1 minute. Whisk in lemon juice until combined.

  3. Add 2 tablespoons cold butter to egg mixture, then place the pan over very low heat. Whisk constantly while butter melts; continue whisking until mixture is thick enough to see the bottom of the pan between strokes.

  4. Remove the pan from heat. Whisk in remaining cold butter, 1 tablespoon at a time, until incorporated.
