Submitted by Sarah Stewart Published on March 29, 2021 Save Rate Print Share Add Photo Prep Time: 15 mins Cook Time: 6 mins Total Time: 21 mins Servings: 4 Cook Mode (Keep screen awake) Ingredients Ingredients * 4 boneless skinless chicken thighs or breasts * 2 Tablespoons Olive oil * Salt Pepper * 8 ounces sliced mushrooms Creamy Parmesan Garlic Sauce: * 1/4 cup butter * 2 garlic cloves minced * 1 tablespoon flour * 1/2 cup chicken broth * 1 cup half and half * 1/2 cup grated parmesan cheese * 1/2 teaspoon garlic powder * 1/4 teaspoon pepper * 1/2 teaspoon salt * 1 cup spinach chopped Directions Instructions In the slow cooker stir together the butter, minced garlic, flour, chicken broth, 1 cup heavy cream or half and half, grated parmesan cheese, garlic powder, pepper, and salt to the slow cooker. Meanwhile, in a large skillet add olive oil and cook the chicken on medium high heat 3 minutes per side, until brown. Remove chicken from skillet. Place the chicken at the bottom of your slow cooker. Add the sliced mushrooms to the skillet, and cook for a few minutes until tender. Add to slow cooker, stir to combine. Cook on low for 6 hours, high 3 hours. When cooking time is over, gently remove the chicken from the slow cooker and set aside. Turn the slow cooker on HIGH, if it isn’t already. Stir in the chopped spinach.
