Insanely delicious..Nom Nom Nom!!! I made this as a 3 layer cake for my Dad's Birthday, and it was to-die-for. My changes were as follows: I subbed one cup of white sugar for packed brown sugar, used 3/4 c. oil and 1/2 c. unsweetened apple sauce (instead of all oil), and used 4 tsp pumpkin spice seasoning and 1/2 tsp ground cloves (instead of the cinnamon called for). I divided the batter into 3 round cake pans, and baked for 25-30 minutes. I frosted the cake with a cinnamon cream cheese frosting, and it paired perfectly :~)

Seriously...this dish is deserving of 10 stars..it's absolutely delicious! And soo easy! I subbed chicken keilbasa for andouille sausage (because it isn't available in my area). I also don't care for shrimp, so I just doubled up on the keilbasa. I followed another reviewer's advice, and used the "Creole Seasoning Blend" recipe from this site, instead of the seasonings called for... (4 Tbs.). About 1/2 an hr before serving, I tossed in 2 cups of instant brown rice. Three words..To-die-for. :~)
SO FREAKIN GOOD!!! Because other reviewers complained of the meatballs being too salty, I halved the salt called for. I also added about 1 tsp minced garlic to the meatballs themselves. My first thought after I took a bite of one (right off the stove), was that it was just wayyyyy toooo sweet. But don't worry, after sitting for about 1/2 and hour or so, the sweetness mellows out. I served this over a bed of brown rice, and with a side of broccoli and baby carrots. 5 stars all the way :~)
I've made this dish several times and have gotten RAVE reviews! Instead of ham, I used crisp crumbled bacon (personal preference). I also used 1 can cream of potato soup and 1 can of cheddar cheese soup. YUMMM!! :~)
I am rating this recipe based on some small changes that I made...For the crust, I used 1/2 c powdered sugar instead of granulated. I upped the granulated sugar to 2 cups for the lemon mixture, and used 3 lemons (juices and zests) These are the perfect little summer treats! :~)
