It actually made 49! I did add 2 scoops (tbsp) of collagen protein; I didn't have enough usable brown sugar, so I added 1 tbsp molasses to the wet ingredients, and used 1 C turbinado sugar (healthier than the white), and only used 1 1/2 C to cut down on the sugar. All I had was whole wheat flour, and mixture was pretty thick, so next time it will be AP. Crunchy with soft centers.
As usual, I used the ingredients I had on hand...1 tbsp Ginger Garlic paste or more to taste in lieu of fresh; 1 tsp lime juice; 1 tbsp Worchester sauce in lieu of fish sauce, and I used 1 tbsp brown sugar and cut down to 2-3 tbsp red curry paste to tone down the heat. Yum
Fantastic! Held together like a muffin should. 1) Added about 1/3 cup cooked mashed sweet potato just to use it up! 2) Didn't add the "topping ingredients". Smelled great baking and taste great too!

I pretty much followed the recipe :), 'cept I used what I had on hand as usual :), 1 yellow pepper/1 Cup diced instead of 1/2 green; added 1/2 tsp cumin; my own canned pint of herbed tomatoes & I added a can of black beans.
Yes, I did make changes as usual! I used what I had on hand... I first made a whole wheat starter from Chef John's recipe here. Then used organic cane sugar instead of bleached white; grapeseed oil (had just enough left) instead of corn oil; and a multigrain bread flour (Roger's brand) for this recipe. It rose beautifully overnight! I don't normally MAKE bread :), but this recipe was easy compared to Chef John's Simple Sourdough recipe! :) I only had 1 pan, so I braided the other half. Only problem... I forgot about it, and left it in 10 minutes longer than necessary! So I will definitely be making it again :).

Just put them in fridge... I didn't have any wheat germ, so I substituted same amount of hemp seeds. Also rolled them in powdered sugar, so they wouldn't be as sticky. Recipe made 15 balls, could've been 16 if they were all uniform :).
