I think this recipe was pretty good it was a little dry but overall it was really good with the homemade frosting but i changed the recipe a little bit by adding 3/4 tsp of sugar.
Absolutely delicious and a beautiful bake! Prettiest cupcakes I've ever made! Instead of using pudding mix, I substituted mayonnaise for the oil and the cupcakes came out perfect! (This is an old southern trick). I doubled the recipe to make 24 cupcakes, but the frosting barely covered 12 (even doubled!). I also tinted the frosting pink.
The batter was way too runny. The pancakes came out flat and not fluffy at all. Adding the egg and lemon juice at the end did nothing for the taste or texture of the pancake.
