Not sure what "Man food" is, but my wife and I both like this recipe. We prefer a little more heat, but usually just keep a jar of hot sauce on the table when eating so we can adjust however we want.

This is a great base recipe made as-is, but who does that?!? For those saying the rice soaked up the liquid, please note the recipe calls for cooked rice. If you want to cook the rice in the soup you’ll need to add some beef broth. I suggest increasing the number of peppers. I use 8, coursely chopped. This is supposed to be pepper soup! I also like to add onions and garlic and a few cups of beef broth. I tried this with riced cauliflower instead of rice for a low carb option and it was excellent. My family didn’t even notice the swap.
This is a fantastic recipe. I made it exactly as written but poured the gravy into a pan once done and reduced it a bit to thicken the gravy. I was tired of mashed potatoes, so I ended up with a classic diner inspired solution. I put the meat on top of toasted texas toast, added crinkle fries on top, then poured on the gravy. The result was a hearty, tasty meal that I will make again!
Now my go to meatloaf. This is fantastic exactly as written. I’ve played around with onions, garlic, parsley, etc, but there is no reason to modify this recipe. I made it for my parents and my 70+ year old dad said “this is the first time I’ve ever eaten meatloaf without putting ketchup on it”. Make this meatloaf!
