Made the marinade exactly as is, letting it marinate only around 4 hours. I then followed another reviewers suggestion and placed the loin on a bed of onion slices once it was ready for the oven. Served it for Christmas Eve dinner with homemade cranberry sauce and roasted red potatoes, using the leftover juices to pour over the potatoes. My husband RAVED about it. Will be making this again!
I followed the recipe for the marinade, but used only 1 lb of jumbo shrimp. I only had time to let it marinate for 30 minutes, but even so, my husband and I thought the flavor was great; it was just enough to set off the taste of the shrimp. I’ll definitely make again!
