Easy and delicious!! Fresh corn makes all the difference I'm afraid! It was great prepared exactly as the recipe shows, but for kicks, I cooked up some spinach & mozzarella raviolis and then topped with spaghetti sauce and the corn & zucchini medley, bacon, and cheese. It was delicious and a little more filling! This will definitely be a repeat recipe!
The first time I made this, I substituted 1 lb hamburger for the mushrooms and I used cottage cheese because I didn't have romano. I accidently used extra-wide lasagna noodles, so I ended up with way to many. (Oops!) My husband and 2 yr. old twins loved it and it disappeared quickly! The second time I tried to make it vegetarian, but this time instead of mushrooms I shredded carrots and broccoli. It was an experiment, and while you could probably slip in a few shredded carrots, my attempt was overpowering!
I'm not a huge feta cheese fan, so I used fresh parmesan instead. I realize the title has feta in it, but I needed to use up some whipping cream which led me here and it tasted great with parmesan.
Without fail, my banana bread always turns out flat and underdone....until now!!!! This banana bread was perfect! I also did 1/2 brown sugar, 1/2 white, mashed my bananas, and left out the nuts. I even forgot about it and when my husband found it still in the oven even after the timer had long since gone off, it was a little darker, but still perfect. Fluffy on the inside, and a little crispy on the outside. Thank you for a "long time needed" recipe!
Wow! Easy and delicious! A yummy way to get veggies into my 2 year old twins! I chopped everything quite finely and they gobbled it down! I used fresh tomatoes because I needed to use them up and substituted some less favored vegetables (cabbage) with more onion, though you could add zucchini, squash, etc. Then I topped each bowl with either mozzarella or parmesan cheese. It was a big hit!
