Made this tonight and served with creamed sweet peas . It was really good. I mainly cook Mexican dishes but my husband is white so I’m exploring new dishes 😊

Absolutely delicious!! I was scared to make because expensive cut of meat to buy and just ruin BUT OMG it was soo good!!!! I didn't have thyme either so I thought it'd be missing some flavor and omg no!! I did buy a smaller one at 4.5 lb so I followed another recipe where they adjusted the temp to the smaller cut and it came out PERFECT!!!

my fiance loved it! it's not dry at all. You can taste the butter and the banana as another person mentioned. Next time I will add some sugar on top for a crusty top
