I really liked this - I loved the smoked paprika and sun-dried tomato combination and the silky coconut milk-based sauce. I had enough of everything around for a half recipe, and couldn't wait to have some leftovers for lunch today.

The stars aligned, and I had everything to make this at the end of a cold day working outdoors - we all loved it! The sweet potato is perfectly seasoned, and the bacon ---ooh la la! Don't skip the jalapeno--it's magic.
The peppers became sweet when roasted, and made a nice contrast with the savory filling. I used a can of fire roasted diced tomatoes, because that is what I had, and liked the smoky flavor they added.
Okay -- that was a stunner! I made it for a genuine Minnesotan, and received full approval. My first hot dish ever (I have made casseroles, but they are not equivalent!). Used Extra Sharp Tilamook Cheddar, scant 2 cups broth, and Hatch chilies I had frozen. 35 minutes on the nose. Now I just have to live through the night without eating the entire rest of it.
