Made this according to the recipe, except that I used some aging peppers and already cut onion, with both chopped, not sliced. It made a wonderful pepper mix that we used as a relish, used mixed into rice, and more. This will be a regular recipe to use in our household.

I made this twice; once with baby carrots, once with regular carrots and once with regular carrots that I peeled and cut to smaller size.It's an easy, good recipe.

I saw this recipe a while back, and finally made the potatoes. I agree with another review that said to pierce the potatoes before microwaving them. I used a mixed bag of mini potatoes and found that the larger ones needed more time in the micro than the recipe suggested. I thought the recipe also used too much salt. All that said, we really enjoyed the potatoes and I will definitely make this recipe again.

Delicious! Made it exactly to the recipe, except with nectarines, because I had them on hand . I'll be making this again soon,

Also had trouble with too much liquid in the baked pie, but the taste was wonderful! I will use other reviewers' suggestions to eliminate that issue.
