I gave this 5 stars for the following reasons: quick & easy to make, ingredients are typically on hand, it only took about an hour and a half in the crockpot and most importantly, my picky family really liked it! I will tell you that I did not make it exactly according to the recipe only because I didn’t have The specific ingredients or the quantity listed in the recipe. I used 20 ounce package of corn tortillas because that’s what I had. Many said it came out saucy so by putting in more corn tortillas I figured it would help take care of that problem. And it did! I also used two cans of cream of chicken soup because my husband absolutely cannot stand cream of mushroom soup. I used about a pound and a quarter of hamburger meat (to use up what I had), one package of taco seasoning, and about a cup of water. I also put in 2 cups of shredded Mexican cheese to the soup mixture and use most of an and use most of a 16 ounce jar of salsa. Then topped it off with a handful of Monterey Jack cheese because that’s all I had. I honestly don’t think that 4 cups of cheese would’ve been necessary. I understand most people don’t think I should write a recipe if I don’t make it according to the directions but I don’t think that the changes I made impacted it greatly. I then shredded some lettuce and serve it on top along with a dollop of sour cream, and, a side of Bens microwavable rice.
Chef John said it would be about 5 times before I got the biscuits the way I like it! It took 3 times and a couple of adjustments… This is what I did: I did not roll out the dough to a half inch because the first couple times I did they didn’t rise as high as I wanted them to, I rolled out the dough & put it on the pan and used a pizza cutter to cut them into squares this way they rose up higher, I also used self rising flour on this last batch because that’s what I had left. I think the key to my successful batch was not rolling them out so thin and keeping them in squares. I also doubled the batch so that I could still get enough biscuits out of the recipe, and I added a bit of sugar in this last batch.
I made this almost exactly as the recipe is written. (I would never write a review on some thing I haven’t tried ). My husband is one of the pickiest eater‘s and even he liked it! Followed by my children and they liked it! What I like best about this is it can all be made at one time. Rather than making and flipping four pancakes at a time in a skillet! ( I’m always the last one to eat or half the pancakes are cold). Minor adjustments I made: I did not have buttermilk so I made my own with 2 tablespoons of vinegar, and adding enough milk to make 2 cups. I used pancake mix in place of baking mix since that’s what I had.… It was a little thick but if I would get a bigger pan it would thin out. While the pancake was baking I also put a pan of bacon in the oven (my preferred way of making bacon). I don’t know if it was my oven or the fact that I had two things going at one time or a combination of both but I had to leave it in for 35 minutes at 350°
I followed the recipe as directed. I knew this would probably be as good as it was because I like all the ingredients in it! My family who is quite picky also really liked it! I did the first part of the recipe the night before when I deboned leftover chicken. When I got home from work all I had to do was roll it in breadcrumbs and put it in the fry pan. It made for a quick and easy dinner.
