The texture and consistency of this Panna Cotta was wonderful! Another recipe I used didn't jell quite as well and did separate a bit. I may cut back a little on the lemon but other than that, it was tasty.
We loved this recipe. I chose it because of the simplicity of ingredients and the fact that blackberries would be a great compliment to pork. I didn't use a slow cooker(ours is broken). My husband seared them at high heat on the grill with the rub ingredients and I slow cooked it in the oven with the blackberry cooking ingredients. We did use the stovetop sauce since we wanted the fresh blackberry flavor. The preserves we used was a good quality too which probably made a difference. We will definitely make this again.
We rarely eat ham but this made for a tasty Easter treat! I used canned crushed pineapple with the brown sugar instead of rings. We thought it turned out great!
I have made this twice since we've been quarantined and have loved and looked forward to getting up and having breakfast already made. It is tasty and easy to cut. It makes for a good banana bread French toast too! Enjoy!
