World's Best Lemon Blueberry Muffins.
Didn’t change a thing with ingredients, but just sprayed the pan or used Crisco instead of cups. Also I made 12 large and 42 smaller size cupcakes from the recipe. Definitely don’t mix the blueberries in too much, I kept some dough rather “white” and added the blueberry mixture to the top and some inside.

Tex-Mex Turkey Soup Recipe.
This recipe is fantastic. What a great use of leftover Turkey from the holidays. I didn’t change a thing. Whole family loves it!

Spinach Quiche.
The comments are correct. This recipe makes too much. So making two quiches makes sense. I threw away some of the liquid egg mixture and didn't add in all the spinach., so it wouldn’t take much more to do two pies. I also added in some fresh chopped basil for flavor.
