This was really nice. Super easy to make and a nice way to use up the gigantic crop of carrots that I had. Next time I will up the spices as I doubled the recipe except for the ginger and curry as they are not my favourites. End flavour was good but quite mild so I won't play around with the recipe in the future.
These were okay muffins but only got a 6/10 from both me and my husband. My husband made some icing which he rated 9.5/10 that really upped the value of the muffins but alone they were just 6/10. On the plus side, they were very easy to make and used readily available ingredients so I liked that but I found them a little dry.
My husband decided he wanted an afternoon snack and stole two cookies shortly after they were taken out of the oven. He then comes over to me, cookie crumbs on his chin and half a cookie still in his hand and says "Oh my God, those are the best cookies I have ever had in all my life. Seriously." So they are a keeper in my house.
These turned out really good but quite dense so more like breakfast muffins than a nice dessert cupcake. I followed the recipe exact but then added fresh cranberries and omitted the icing.
These were delicious! The only problem with them was entirely my own fault. They were just way too huge to make a double cookie so I just iced each one separately and left it at that. That's just more icing per cookie. Also cookies were more of a consistency of cake rather than muffins. Still delicious.

This soup was quite good. I omitted the butter but next time I might add some cream to make this a creamy soup.
