Loved it, as did my family and guests. I used 8 thighs and yellow potatoes, because that's what I had on hand. The only change I made to the recipe was to reduce the olive oil to 1/4 cup for the marinade. Thanks Chef John!

I've used this recipe about 8 times, and it always produces a delicious banana loaf that disappears too quickly! The minor tweaks I've made are for my individual preference and do not really change the recipe. Like other reviewers, I use half brown sugar and half white sugar, and I add a teaspoon or so of vanilla. Often I also thrown in some chopped pecans. There is enough batter to make a good sized loaf plus a dozen mini muffins for the grandkids or for a quick snack for the grownups.

The recipe is wonderful, so easy. I brought it up to 5 stars with the additions suggested by other reviewers, vanilla, cinnamon & nutmeg. I also added pecans (personal preference) and topped some of the muffins with a light, peanut butter frosting.
