Reminded me of roast only with chicken. I cannot stand chicken skin, fat, or bones, so I always use chicken breasts. I cut them into big chunks and used Yukon gold potatoes. I soaked both in the sauce while the oven came to 400. I kept the cook times the same. Then I broiled just the potatoes as written. I basted all with a little juice when serving. I could easily see adding some carrots and onion. I saw this as a mexican chicken n dumplings and was pretty stoked. I did make it to spec. I used green enchilada sauce including in place of the water and did double the cumin and chili powder. It had a nice flavor. The problem was the masa. I just don’t think masa + water is correct for the drop dumplings. Needs Crisco, butter, or coconut oil to truly make the dough. Look up chochoytes and I think that’s the ticket. Otherwise, it’s tasty Mexican gravy that you can crumble corn chips into for substance. I typically cut about half of the butter with equal parts applesauce. I do the same with the brown sugar, replacing with stevia for baking. I also like to 50/50 the white flour with wheat. I’ve also replaced the egg with flaxseed flour and water. I’m sure the recipe as written is THE BEST, but the healthy version is pretty good too. Helpful (0) Cuban Black Beans II 03/03/2021 This may be one of the few times I’ve added a low rating to an overall high consensus, but I’m not a fan of the overall flavor—and like many, I did add some traditional Cuban spices. I soaked the beans overnight, sautéed the veggies first, and then used the crockpot for cooking. It wasn’t terrible, but there are better recipes to choose from, so I won’t make it again. Helpful (0) Healthy Banana Chocolate Chip Oat Muffins 02/14/2021 There were so many mods to this highly rated recipe, I thought I’d better start with my own, and I’m glad I did. This is a healthier version. I put all of my liquids in my Kitchenaid mixer and let it go for a while, including the bananas and sweeteners. I doubled the milk and bananas, added a couple of dates, instead of white sugar-half brown and half agave syrup, a little vanilla and cinnamon, and 1/2 c coconut flour in place of the 1.5 c WW flour. I don’t believe anyone should skip the applesauce in muffins, as this really makes the recipe healthy, and eliminates the need for fattening butter or oils. (This is with the 12 serving, as I seldom make whole recipes—one of the many things I love about Allrecipes for those of us who cook for less people.). I did the 400 degrees for about 18 minutes, and these come out extremely moist. I recommend letting them cool thoroughly as directed. Helpful (1) Vegan Coconut-Oat Bars 01/16/2021 First of all, this recipe mod is really for any Daniel fast readers looking for a sweet option. Because no sweetener is allowed for me (honey, agave, sugars, etc), I needed something sticky and sweet too add. I also thought having extra moisture for the backing process would be better. I added about a 1/4 c. Unsweetened applesauce and raisins in addition to the dates for the sweet,and made an egg sub from flaxseed flour and water for the sticky. I also added in salted sunflower seeds so omitted the extra salt. Worked like a charm! Of course, if you don’t need the mods, it’s a great recipe as is. Helpful (0)
